I am what you would call 'Mac stupid' and don't know too much about it. However, if you are uninstalling all Java (are you sure???) the only things that could be causing you grief (as far as Java goes) are:
- Old Java plugin(s) installed in Safari
- Java Control Panel has information about old versions.
Run the JCP app and make sure ALL versions of Java are removed if you are not running them. JCP on most platforms (again, Mac stupid here) have a 'default' setting. No idea why it runs differently on all platforms, but if there is a version here it will be called by default if a specific version is not requested by the application. The JREs listed here will show a path to the executable machine -- make sure these are entirely removed and the directories have been deleted. Go into your plugins/extensions in Safari and remove ALL Java plugins. Then, uninstall Java, and make sure the entire Java directory is removed.
Reinstall the Java version you want. Run the JCP for that version and make sure everything still looks OK. Install the Java plugin in Safari. Restart Safari, and verify the version at https://www.java.com/verify

Get connected

For the strongest security and latest features, find out whether you can upgrade to macOS Catalina, the latest version of macOS.
If you still need OS X Yosemite, use this link: Download OS X Yosemite. A file named InstallMacOSX.dmg will download to your Mac.
Install the macOS installer
Double-click the downloaded file to open a window showing its contents. Then double-click the file within, named InstallMacOSX.pkg.

Begin installation
After installation of the installer is complete, open the Applications folder on your Mac, then double-click the file named Install OS X Yosemite.
